Microgreens
Wheatgrass
Triticum aestivum
Wheatgrass is grown densely to cut and juice as a shot. It provides chlorophyll, B vitamins and enzymes; the same mat can give 2 to 3 cuts.

Quick step-by-step
Soak the seed for 8 hours
Hydrate the seed for 8 hours before sowing.
Prepare the tray
Use a 20×40 cm (8×16 in) tray with 3–4 cm (1.2–1.6 in) of soil or coco coir.
Sow it dense
Spread 150–200 g (about 5.3–7 oz) of seed per tray, packed close together.
Give it diffuse light
12 to 14 hours of diffuse light (it tolerates less light than other microgreens), at 18–24 °C (64–75 °F).
Water moderately
Keep the medium always moist, never waterlogged, with moderate watering and light misting.
Cut, then cut again
First cut at 15–18 cm (6–7 in) tall; the second cut comes 7 days after the first, off the same mat.
Common mistakes
Excess moisture at the base
Gray mold at the base shows up from excess moisture and poor airflow.
Letting it overgrow
Past 20 cm (8 in) or with too little light, the flavor turns very bitter.
Forcing a fourth cut
After the third cut the mat loses vigor; it's not worth cutting again.
